Ramadan Recipe Call Response #1 – Zucchini Pancakes
This recipe was sent to me by an American friend who is married to an Algerian guy. They make the cutest couple, and I’m so blessed to know her!
2 C Grated Zucchini
2 Grated Carrots
1 Large Onion Grated
1 C Soda Crackers or Bread Crumbs
2 Large Eggs
1/2 – 1 C All Purpose Flour
Drain veggies well, then add all the other ingredients. Mix well. Drop by spoonfuls into hot oiled pans. Brown on each side, salt and pepper to taste.
Serve with Sour Cream.
